Healthy Spaghetti with Homemade Sauce

Ingredients

Noodles

  • 1 lb ground turkey
  • 2 zucchini squash
  • 1 yellow squash

Sauce

  • 1 28oz can of crushed tomatoes
  • 1 28 oz can of diced tomato
  • 1 yellow onion
  • 1 bundle of parsley
  • 1 oz fresh basil
  • 1 tsp olive oil
  • 1 tsp salt
  • 1 tsp pepper
  • 2 tsp Garlic Powder

Directions

Use a spiral-er to make the zucchini and squash into noodles. Combine salt, pepper, parsley, basil, olive oil, onions, garlic powder into a food processor and combine until liquid. Pour the liquid mixture into a pan big enough to hold, typically a standard 10″ pan does the trick. Put the pan over medium-high heat. Stir frequently. The substance will turn from light green to a dark green as you cook it. In a large saucepot put the crushed tomatoes and diced tomatoes with 1 can of water and turn on medium-low heat, then add the combined mixture into the pot. Let simmer for 1 hour. Take off heat and let it rest for 30 min. Put zucchini and squash noodles in another pot cook on medium-high heat until noodles become soft. Take a skillet and begin to cook the ground turkey. Once cooked combine into the sauce and allow it to marinate for at least 5 min before serving.
