I shared a great any-time-of-day recipe last week on our Instructor blog and talked about how our founder Donna Ryan and I have been swapping stories and recipes for years.
Today’s recipe is another tried and true delicious any-time-of-day recipe from Donna. We have served it during many of Birth Boot Camp Doula trainings. It is fabulous as leftovers-if there are any.
Nutrition is so important during pregnancy and we want to help you add whole foods in a variety of ways. This meal is a great way to add in orange and red foods. The orange is packed with beta-carotene, B6, vitamin A, fiber. Red full of folate, lycopene, and vitamin C.
Sweet Potato Hash – Instant Pot Style
6 servings
Ingredients
2 sweet potatoes peeled and chopped
yellow or red sweet pepper
Onion
1 lb breakfast sausage
1 chopped russet potato – can leave the skin on chopped
1 can diced tomatoes (juice included)
Salt & pepper
shredded cheddar cheese (optional)
Directions
Saute sausage in Instant Pot (meat/chicken setting) until browned.
Add onion and saute for about one minute.
Then layer peppers, sweet potatoes, potatoes, and diced tomatoes.
Lock Instant Pot and program manual setting for 6 minutes. (or soup button for the lowest time)
Add salt and pepper.
Quick release; drain juices.
Add shredded cheddar cheese if desired.
Delicious with scrambled eggs and fruit salad.
