There is nothing quite like a delicious cheesy bread to go along with your favorite pasta dish or soup! This zucchini cheesy bread recipe is not only delicious, but healthy too! It’s a great add-on to make during pregnancy or postpartum. Let us know if you try it!


  • 4 c grated zucchini
  • 2 large eggs
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 3 c shredded mozzarella
  • 1/2 c parmesan cheese
  • 1/4 c cornstarch
  • salt
  • pepper
  • crushed red pepper
  • parsley
  • marinara sauce for dipping



  1. Preheat oven to 425 and line a baking sheet with parchment paper.
  2. Grate zucchini, or bet yet, use a food processor.
  3. Squeeze liquid out of zucchini.
  4. Add all ingredients (using just 1 cup of the mozzarella) up to the crushed red pepper. Mix well.
  5. Transfer “dough” to baking sheet and pat into a crust.
  6. Bake about 25-30 min. or just until dried out and golden brown.
  7. Sprinkle remaining 2 cups cheese, parsley, and crushed red pepper on top and bake for another 8-10 minutes.
  8. Slice into “bread sticks” and dip in marinara sauce.
