This is my go-to muffin recipe! It’s quick and easy to whip up and is so delicious! Perfect with breakfast in the morning, or as an afternoon snack with honey or jam. Make a big batch and freeze some for later or gobble them all up in a few days. Either way, you’re going to love these muffins! Submitted by Caryn Allen.
1/2 c. butter, softened
1 c. brown sugar
2 c. whole wheat flour
1 tsp. baking soda
1/4 tsp. vanilla
1 c. milk
1 c. nuts, optional
-Preheat oven to 425 degrees F
-Cream butter and sugar, and then add egg.
-Alternate mixing in the milk and flour. Add baking soda and vanilla.
-Fill muffin tins 2/3 full and bake for 12-15 minutes.
