It’s September, and that means it’s almost fall! Fall is my favorite time of year for so many reasons, and one of those reasons is that it’s soup season! Soups are so easy to make, super tasty, and almost always really healthy for you. This is my favorite potato soup, which is perfect for those cooler evenings when you need some warmth and a little bit of comfort food.

4 Large Potatoes

2/3 c. Butter

2/3 c. Flour (or Cornstarch)

6 c. Milk

3/4 tsp. Salt

1/2 tsp. Pepper

1 1/2 c. Shredded Cheddar Cheese

12 Slices of Bacon

4 Green Onions

8 oz. Cream Cheese

 

  1. Bake potatoes (I prefer to use my instant pot to do this) and let cool. Scoop out center and set aside.
  2. Melt butter and add flour (or cornstarch) until smooth. Add milk little by little, stirring constantly, until thick.
  3. Add remaining ingredients and heat on low until flavors are incorporated and soup is warm.
