Sometimes you just want a little dessert without involving the entire kitchen. Today’s healthy dessert recipe fills that role and will even help a momma with her own Mother’s Day celebrating. Simple ingredients and quick prep make this recipe one that will be on repeat and made by memory. We love having our student’s share their favorite recipes and this week is a repeat contributor! Our founder Donna Ryan’s recent student Leah Hall shared why she loves this recipe. “Um… brownies?! Oh, and it’s fast, mostly vegetable, and protein ladies! Perfect craving snack!”
100 Calorie Protein Mug Brownies
- 1/4 cup pumpkin
- 1/2 scoop protein powder
- 1 TBSP baking cocoa
- 1 TBSP stevia or honey (optional)
- Mix all ingredients in a mug.
- Microwave for 1-1.5 minutes.
- The recipe may be doubled, watch for overboiling of the mug.
