This quick and easy breakfast recipe was submitted by Jennifer Swiney, a BBC doula in Grand Prairie, Texas. She says, “I’ve been a BBCD since 2015. I love birth work in DFW, but it can be challenging to feed my family, homeschool, and manage a busy schedule. I love finding a dish that everyone can enjoy. It simplifies mealtime if it’s just one meal to prepare with chosen toppings. I thought other busy families could benefit too. I hope your family and friends enjoy this simple breakfast dish. It is always a hit at my house! If you try it, stop by and let me know what you think.”
Serving Size: 4
1/3 cup butter
4 eggs
1 cup flour
1 cup milk
2 tsp vanilla
1 tsp cinnamon
Melt butter @ 425 degrees in a glass dish and toss the rest altogether in your blender on low until mixed well. While your batter blends, pull your pan of melted butter out of the oven. Pour the liquid into the dish. Don’t worry where the butter goes! Bake for 20-25 minutes or until it gets really puffy and golden brown at the peaks. Serve in hot little squares topped with fruit or maple syrup. Your family will love it and stay full longer!
Thanks for this delicious recipe, Jennifer!
