Birth Boot Camp Postpartum Meal: Mississippi Roast

Our recipe today was a favorite from one of our Birth Boot Camp Postpartum Doulas. It’s a hardy and delicious Mississippi Roast. Not only does this protein-filled recipe (perfect for pregnancy too!) take less than 30 minutes to prep, but you can just throw it all in the slow cooker and walk away. Add a side salad and some steamed vegetables and you’ll have the perfect meal.

Ingredients

1 chuck or Rump Roast
1 packet brown or Aus Jus gravy mix
1 packet dry ranch dressing mix
1 stick butter
10 pepperoncini peppers

Directions:

Place Roast in slow cooker, sprinkle gravy mix and ranch dressing over top of roast.  Place stick of butter and pepperoncini peppers on top of roast. DO NOT ADD WATER – ROAST WILL MAKE ITS OWN GRAVY. Cook on low 8 hours, or high 3 hours. Serve over rice.
